Baked Apple Cheesecake Muffins



Baked Apple Cheesecake Muffins

Ingredients:
Filling:
2 Golden Delicious Apples, peeled, cored, chopped small¼ cup Sugar⅛ cup Water 1 tsp Cinnamon 1 tsp Cornstarch

Dough:

1 stick Butter or Butter Flavored Shortening 1 cup Sugar 1 tsp Vanilla 2 Eggs¼ cup Milk 1 pkg Cheesecake Flavored Instant Pudding 2¼ cup Flour, if you live in an area with elevation under 5,000 ft you might want to cut that down to just 2 cups 1 tsp Baking Powder 1 tsp Baking Soda 1 tsp Salt¼ tsp Cinnamon

Glaze:

½ cup Cream Cheese, softened¼ cup Milk¼ cup Powdered Sugar

In a saucepan, combine apples, sugar, water and cinnamon. Cook over medium heat until apples begin to soften and water starts to evaporate. Whisk in cornstarch until combined, cook for another minute and remove from heat. Allow to cool while preparing the batter.Blend together butter, sugar, and vanilla. Beat in eggs, milk, and pudding packet. Stir in flour, baking soda, baking powder, salt, and cinnamon.Grease muffin tin or use muffin liners.Spoon half of the muffin batter into the prepared muffin tin. Spoon 1 tsp. of the apple filling into the center of the muffin cups. Cover each muffin using the remaining batter.Bake at 350 for 15 - 20 minutes or until golden brown and tops spring back when lightly touched.For the glaze - blend together cream cheese, milk and powdered sugar. Drizzle over muffins fresh from the oven.
