BEEF STROGANOFF A LA MB



BEEF STROGANOFF A LA MB 
Favorite cut of Beef -sliced thin or bite size
olive oil to coat frying pan
Flour to coat beef
Salt/pepper beef and dredge in flour. Brown in olive oil and add :
1 can mushroom soup
1 can beef broth
1 can mushrooms drained or fresh sliced mushrooms.
1 small can petite peas or frozen.
Bring all to a boil, cut fire to simmer and cover. Cook 30 minutes or until beef is fork tender. (I love this recipe in a crock pot. Just add the peas at the end) Add more broth if needed. Cook to a gravy like finish.

ADD: When dish is done, add 1 /2 to 1 cup sour cream depending on how much you are making. Cook a few more minutes until sour cream blends.
Boil noodles ( I like egg noodles) 1 Package.
to al dente or to the bite. Drain, add 2 tablespoons of butter. Place on serving bowl and ladle Beef stroganoff over the noodles.

CUCUMBER ROULADES



CUCUMBER ROULADES
1 seedless cucumber, peeled
1/4 cup Chive & Onion Cream Cheese Spread
1 oz. smoked salmon, thinly sliced, cut into 12 pieces
12 sprigs fresh dill 
CUT cucumber into 12 slices.
USE melon baller to scoop out indentation in center of each.

FILL with cream cheese spread; top with salmon and dill.
Substitute 12 canned baby shrimp for the salmon.
Omit salmon and dill. Fill cucumber slices with cream cheese spread as directed. Drizzle with 1 Tbsp. Italian Roasted Red Pepper Dressing.

SALSA FROM CUCUMBERS



SALSA FROM CUCUMBERS
2 cucumbers - peeled, seeded and chopped
1 cup sour cream
1 cup plain yogurt
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 teaspoon ground cumin
1/2 teaspoon salt

In a medium bowl, combine the cucumber, sour cream, yogurt, parsley, cilantro, cumin and salt. Mix well. Cover and refrigerate for 2 hours before serving.

Put favorite herbs into an ice tray and pour olive oil over them. Great for Winter for soups or for seasoning any dish.

SQUASH BUNDT LOAF



SQUASH BUNDT LOAF
3 cups summer squash, sliced, cooked, and drained
1/4 cup melted butter
1/4 cup milk
3 eggs, well beaten
1 teaspoon salt
1/8 teaspoon pepper
1 cup buttered bread crumbs
1 tablespoon onion, minced
Preparation:

Mash squash or force through colander. Add remaining ingredients; blend well and turn into a well greased ring mold. Set ring in pan of hot water and bake at 350° for 45 minutes or until knife comes out clean when inserted near center. To remove squash ring, place serving dish over ring then turn dishes over quickly. Center may be filled with buttered peas, carrots, or other vegetables. I wish I had a better picture. Excellent with cream cheese mixed with sour cream and herbs spread on a slice.

CORNY NOODLES KISSED BY BACON



CORNY NOODLES KISSED BY BACON
8 ounces egg noodles
4 cobs of corn or 1 can,rinsed and drained or frozen
4 strips of bacon (or none for vegetarians.)
4 scallions
4 tablespoons butter
6 basil leaves or 1 teaspoon
a pinch of fresh marjoram (Optional but good)
zest from 1 lemon
salt and pepper
Cut the corn off of the cob, then milk the cobs as well. Thinly slice the scallions, and chop the herbs. to milk the cob, set the cob on end in a bowl and run the back side of your knife down it to get the juices and kernel tidbits out this adds extra corny goodness to your dish!

Start a pot of water boiling for the noodles. Crisp the bacon in a large skillet. When it is nice and crunchy, remove it to a paper towel and drain all but a thin coating of bacon fat. Put the heat on medium add the butter and the corn to the skillet. Season with a pinch of salt and a couple of grinds of pepper.
Your water should be boiling so put the noodles in, they probably take 6 minutes. Add the corn "milk" and the noodles to the skillet, then toss in the herbs and green onion and the bacon. Zest the lemon into the pan, toss, and serve.

SOUTHERN STYLE "LICK THE BOWL" ROAST BEEF



SOUTHERN STYLE "LICK THE BOWL" ROAST BEEF
4 Pound Chuck, Sirloin or your choice of meat.
Kosher salt to cover.
vegetables such as potatoes, onions, celery, and anything your family likes. Cut these into chunk size pieces.
2 cups of Beef broth or more if needed.

COVER beef on both sides with heavy kosher salt, pepper. I also love garlic powder on beef. Brown thoroughly on both sides in a little hot oil to cover bottom of pan.

Turn oven to 375 to pre heat or turn crock pot on to high. After all is heated up, place your beef broth and vegetables into grease baking dish or greased crock pot. Set the roast in with the vegetables. Put the lid on and 3 to 4 hours later, it should be ready to enjoy. You want it true country style, fork tender, so it pulls apart. Crock pot should remain on high and may be just a little longer

For a wedding platter, decorate the strawberries as bride and groom and the rest of the platter, put the strawberries in chocolate tuxedos.

SQUASH,CABBAGE,SAUSAGE CASSEROLE
2 large acorn squash OR your choice of squash.
2 cups shredded cabbage
1 medium onion, chopped
1 medium apple, chopped
1 tablespoon butter
1/2 pound pork sausage, cooked, drained (Optional)
3/4 teaspoon salt
1/2 teaspoon dried sage leaves
1/4 teaspoon dried thyme
1/4 teaspoon pepper
2 tablespoons slivered almonds

Cut squash in half; remove seeds. Place with cut side down in a 13-in. x 9-in. baking dish. Add 1/2 in of water to pan. Cover and bake at 400° for 20 minutes or until tender. Cool; scoop out pulp (should have about 4 cups).
In a large skillet, saute the cabbage, onion and apple in butter for 5 minutes or until tender. Stir in the sausage, salt, sage, thyme and pepper. Remove from the heat; add squash. Place in a greased 2-qt. baking dish. Sprinkle with almonds.
Bake, uncovered, at 350° for 30 minutes or until heated through. For approx. 8 people. Thanks to my fall collection of recipes from magazines. This is really good. (not actual picture) but very similar.

ZUCCHINI BIG BITES



ZUCCHINI BIG BITES
1 tablespoon olive oil
1 onion, finely chopped
3 slices bacon
1 large carrot grated 
1 large zucchini grated
3 eggs
1 cup cheese grated
1/4 cup cream
1/2 cup self rising flour

Heat the oil and saute onion until translucent. Add the bacon and fry until starting to crisp.
Add the carrot and zucchini and cook for about 2 minutes. Transfer mixture to a bowl to cool. Beat the eggs, cream and cheese together; season to taste. Stir the egg mixture into the cooled zucchini mixture.
Stir in the flour. Grease and flour little muffin/bun tins. Spoon mixture into the holes.
Bake at 350 degrees for 15-20 minutes. These are cute baked in the cake pop pans. Great with a sour cream and ranch dressing dip.

7 large eggs
2 tablespoons milk
3 roasted garlic cloves, crushed(Or 1 tablespoon garlic powder)
1/4 teaspoon lemon pepper
1 dash salt
3 slices cooked bacon, chopped (optional)
1 large flour tortilla
1 1/2 cups any blend shredded cheese
3 cups fresh spinach
Mix the first six ingredients (eggs, bacon, milk, garlic, lemon pepper and salt) in a bowl. Set aside.
Lay the flour tortilla in a glass pie dish, press gently - does not need to lay perfectly flat against dish.
Sprinkle only 1/2 cup cheese on tortilla.
Sprinkle remaining cheese and the spinach onto tortilla in layers, and press gently. Pour egg mixture evenly over spinach, be careful not to pour any outside of tortilla as this causes it to stick to pan
Bake in oven at 365 degrees for 35 to 45 minutes. Insert fork in center and it should come out clean.
Use sharp knife to cut into pie slices and serve hot. , serve with homemade salsa. 

EASY SPINACH ,CHEESE, PESTO LASAGNA

3 cups ricotta cheese
1 cup Parmesan cheese (shredded)
1 egg
20 ozs spinach (frozen chopped, thawed squeezed dry)
7 ozs pesto (prepared)
4 cups chunky pasta sauce (bottled)
12 lasagna noodles (one 8 ounce package)
2 cups fontina cheese (grated)(Can buy packaged with 4 cheeses)

EASY CREAMED ONIONS



EASY CREAMED ONIONS
3 large onions, peeled, quartered, and sliced (6-8 cups)
1/2 cup water
3 cups water
1 3/4 cups basic Cream Soup Mix
1 tablespoon Worcestershire sauce
6 drops Tabasco pepper sauce
2 cups shredded Swiss cheese
3 tablespoons butter
1 cup dry bread crumbs
Place the onions and 1/2 cup water in a large microwaveable container, cover with plastic wrap, and microwave for 8-10 minutes or until the onions are tender.

Whisk together the 3 cups water, Basic Cream Soup Mix, Worcestershire sauce and Tabasco pepper sauce.

Microwave 3 minutes, whisk until smooth, then microwave until bubbly and thickened, 4-6 additional minutes.
Stir in the onions (with cooking liquid) and the Swiss cheese.
Pour the mixture into a 2 quart casserole dish.
Microwave the butter 20-30 seconds until melted; mix in the bread crumbs and spread them evenly over the onion mixture.

Bake in a preheated 350° oven for 30-35 minutes or until bubbly.

GERMAN LIP SMACKING PORK STEW



GERMAN LIP SMACKING PORK STEW
Nonstick cooking spray
2 - 2 1/4 pounds boneless pork shoulder or beef chuck, trimmed and cut into 3/4-inch cubes
1 16 - 20 ounce package refrigerated diced potatoes
2 12 ounce jars mushroom gravy
1 1/2 cups apple juice
2 teaspoons caraway seeds

Lightly coat a 12-inch skillet with cooking spray. Heat over medium heat. Add pork; cook and stir until light brown. Drain off fat.
In a 3 1/2- or 4-quart slow cooker, combine pork, potatoes, gravy, apple juice, and caraway seeds.
Cover; cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3 1/2 to 4 hours.

LOW CALORIE STUFFED ZUCCHINI CUTS




LOW CALORIE STUFFED ZUCCHINI CUTS
2 large zucchinis, 1 large onion, 2 carrots, 1 celery stalk,s 1 potato, scoop of rice, parsley leaves, oil, salt and pepper
.
Wash the zucchinis, dry them, cut horizontally into halves and scoop out the pulp. Chop the onion, grind the carrot, the celery and the potato. Chop zucchini pulp and parsley leaves. Preheat a pan with 1 tablespoon of oil and fry the onion together with the carrot, the celery and the potato. Add zucchini pulp and parsley leaves and pour 1 cup of water. Simmer for a couple of minutes; add rice, salt and pepper. The rice doesn’t have to be completely cooked, it will bake in the oven.

Fill each zucchini shell with the equal amount of stuffing and bake in the oven until golden brown on top. Serve with fresh cabbage salad and low fat white cheese.

BAD BUT GOOD BACON DEVILED EGGS



BAD BUT GOOD BACON DEVILED EGGS
Boil eggs in salt water for approximately 10 minutes.
Take out of hot water and put in cold bath.
When cool, peel, cut in half and place the yellow yolk in a bowl.
Add salt and pepper to taste, a dash of curry, a tip of the spoon of horseradish, a dash of mustard, and crumbled up fried bacon, reserving some of the bacon for the top.
Mix together and spoon into white of eggs.
Sprinkle with a little paprika.
Add the rest of the crumbled bacon to the top and enjoy.
Chopped up black pimento is also good in this.

EASY TATER TOT RECIPE



EASY TATER TOT RECIPE
1 lb ground turkey(Beef, tofu,soyburger, pork or whatever choice.)
1 cup diced onion ( use frozen to make it easier.)
1 pkg (32 oz) tater tots
1 can (10 oz) cream of mushroom soup
1 can (10 oz) cream of chicken soup
2 cups grated cheddar cheese
1/2 tsp garlic salt
fresh ground black pepper, to taste
paprika, to sprinkle on top
1/4 cup flat leaf parsley

Preheat oven to 350°F. While oven is preheating, brown ground turkey and onion; drain.
Grease a 9×13 inch-baking dish. Transfer turkey and onion mixture to baking dish.
In a large bowl, combine cream soups (undiluted), cheese, garlic salt and black pepper. Once thoroughly combined, toss in tater tots and coat evenly.
Transfer coated tater tots to the baking dish and place on top of turkey and onion mixture.
Bake for about 45 minutes or until the top begins to brown slightly.
Sprinkle with paprika and parsley.

OCTOPUS FRUIT FUN



OCTOPUS FRUIT FUN
1 green apple, green grapes, about 7 mini chocolate chips (you could also use raisins), and 1 mini marshmallow.

A small cut on the side of the apple to get it to stand up and not roll over. You could also just cut it in half to make 2. Cut grapes in half and placed those on the plate for the octopus arms. Cut the mini marshmallow in half and attached them with peanut butter for the eyes. Attach the mini chocolate chips to the marshmallow halves and for the mouth.

CROCKPOT GUMBO



CROCKPOT GUMBO
3 tablespoons flour
3 tablespoons oil
1/2 pound smoked sausage, cut into 1/2 inch slices
2 cups frozen cut okra
1 large onion, chopped
1 large green bell pepper, chopped
3 cloves garlic, minced
1/4 teaspoon ground red cayenne pepper
1/4 teaspoon pepper
1 can (14.5 ounce size) diced tomatoes, undrained
1 package (12 ounce size) frozen shelled deveined cooked medium shrimp, rinsed
1 1/2 cup uncooked regular long-grain white rice
3 cups water
In small saucepan, combine flour and oil; mix well. Cook, stirring constantly, over medium-high heat for 5 minutes.This is your Roux. Reduce heat to medium; cook, stirring constantly, about 10 minutes or until mixture turns reddish brown. Place flour-oil mixture in 3 1/2 to 4 quart Crockpot.

Stir in all remaining ingredients except shrimp, rice and water. Cover; cook on low setting for 7-9 hours. When ready to serve, cook rice in water as directed on package. Meanwhile, add shrimp to gumbo mixture in crockpot; mix well. Cover; cook on low setting for additional 20 minutes. Serve gumbo over rice.

Tuxedo Peeps




Tuxedo Peeps
  • 1 1/2 cups dark chocolate chips
  • 1 1/2 cups white chocolate chips
  • pastel polka-dot sprinkles
  • 2-3 packages of bunny Peeps
Melt the white chocolate chips in a medium glass bowl.  To ensure that your chocolate is melted without becoming singed, pop the bowl in the microwave for 30 seconds, then remove it and stir.  Return to the microwave for 30 seconds, then remove it and stir again.  Continue doing this until the chocolate is smooth and  melted, but not warm to the touch.
Dip the bottom half of the Peeps into the melted white chocolate, covering the entire bottom half of their body, up to their little necks.  Place the dipped Peeps onto a piece of parchment and allow the chocolate to cool and harden completely.
Melt the dark chocolate chips in a medium glass bowl.  Dip the Peeps diagonally on the left side, then on the right side of their bellies.  Return to parchment and allow to cool and harden.
Spoon some of the remaining chocolate into a ziptop bag.  Cut a very small corner from the bag and pipe a small amount of chocolate on the back of a polka-dot sprinkle.  Gently press sprinkle into place as a “button.”  Pipe a bowtie just above the sprinkle button.  Return to the parchment and allow to cool completely before serving.

CRAB PUFFS



CRAB PUFFS
In Pastry shell, add mixed 8 oz of blue crab, 8 oz of cream cheese, 1/4 cup of onion chopped, 1/2 cup of celery chopped. 1/4 ts of garlic powder, 1/2 ts of salt. Deep fry for 2 minutes in 2 inches of oil or until golden brown. The sauce is cocktail sauce and Chinese Hot Mustard.

FRIED AVOCADO IN TEMPURA BATTER



FRIED AVOCADO IN TEMPURA BATTER
1 egg
1 cup ice water/cold water
1 cup all purpose flour, sifted
Beat an egg in a bowl. Add ice water in the bowl. Be sure to use very cold water. Add sifted flour in the bowl and mix lightly. Be careful not to overmix the batter.
DIP avocado pieces in batter, salt/pepper to taste. A dash of cayenne pepper to the batter will liven it up.

DIP FOR FRIED AVOCADO
SOUR CREAM
SQUEEZE OF LEMON
DRIED ONION FLAKES
HINT OF GARLIC.
DASH OF CAYENNE.

2 pints cherry tomatoes
1 avocado, peeled and diced 
1 teaspoon lemon juice 
1/4 cup mayonnaise 
8 cooked bacon slices, crumbled
2 green onions, finely chopped
Salt and pepper to taste
Cut a small slice from the top of each tomato; scoop out pulp with a small spoon or melon baller, and discard pulp. Place tomatoes, cut sides down, on paper towels, and let drain 15 minutes.
Meanwhile, combine avocado and lemon juice in a small bowl, stirring gently; drain. Stir together mayonnaise, bacon, and green onions; add avocado mixture, and stir gently until combined.
Spoon avocado mixture evenly into tomato shells. Cover with plastic wrap, and chill 1 hour. Sprinkle with salt and pepper to taste just before serving.

Slice different color peppers into rings. Grease a pan, break an egg in the center, salt and pepper or add other ingredients.

STRAWBERRY MOUSE IN THE HOUSE

For each mouse, slice a small section from the side of a strawberry so it will sit flat.
Press a mini chocolate chip into the tip for a nose, using a small dab of melted chocolate or icing to secure it in place.Icing for the eyes and stick 2 almond slivers into the top of the berry for ears.
THE TAIL- use a toothpick to make a small hole in the back of the strawberry and push the end of a piece of licorice lace into the hole. Serve these strawberry cute mice with small wedges of cheese.

STUFFED ZUCCHINI BOATS



STUFFED ZUCCHINI BOATS
Boil, after washing, whole zucchinis until fork tender. Take out dry and let cool. In a skillet, use a good oil to cover bottom, saute fine chopped peppers, onions, garlic (Can use packaged) and 1 package of fine chopped white mushrooms with favorite seasonings.
SPLIT zucchinis and gently remove most of the interior and add to the sauteed mixture. Place zucchini boats into a greased bowl.
After adding interior squash to mixture, add a little cream and bread crumbs to dressing like consistency. Fill the zucchini boats with the mixture. Add leftover to bowl. Sprinkle all with finely ground Mozzarella and crispy onions. Bake until cheese melts. This is so good!! I had to borrow a picture because it was eaten before I good photograph them.

PORK CHOPS/ORANGE MARMALADE



PORK CHOPS/ORANGE MARMALADE 
Mix 2 large tablespoons Dijon Mustard, 1 tablespoon honey, 2 large tablespoons Orange Marmalade. Salt and pepper. Pour over thin sliced pork chops. Bake 20 to 30 minutes @ 350 degrees or until done. Turn one time half way through. So good. I keep mine covered and they still brown.

CAMILLA'S PASTRY PUFFS



CAMILLA'S PASTRY PUFFS
All-purpose flour
1/2 of a 17.3-ounce package Puff Pastry Sheets (1 sheet), thawed
6 ounces kielbasa, diced (about 1 1/2 cups)
2 tablespoons orange marmalade or your favorite jam
1 tablespoon Dijon-style mustard
Chopped fresh parsley
Heat the oven to 400°F. Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Roll the pastry sheet into a 10x15-inch rectangle. Cut the pastry sheet into 24 (2 1/2-inch) squares. Press the pastry squares into 24 (1 3/4-inch) mini muffin-pan cups.
Stir the kielbasa, marmalade and mustard in a medium bowl.

Spoon about 1 tablespoon kielbasa mixture into each pastry cup.
Bake for 15 minutes or until the pastries are golden brown. Sprinkle the pastries with the parsley before serving.
**Pastry cups can be formed and baked and then filled with tuna, chicken, ham salad or fruit..great fast idea for parties.

NONALCOHOLIC STRAWBERRY SHOTS



NONALCOHOLIC STRAWBERRY SHOTS
Box of large Strawberries
1 cup lemon lime Mix (boil 1 CUP)
Strawberry Flavored Jell-O
Sugar and Limes
Cut bottom of strawberry flat, scoop out center, add the mixture and freeze for up to 4 hours. Take out, dip strawberries in the extra lemon lime mix and then sugar. Garnish with lemon or lime.

Cheesecake Stuffed Strawberries



Cheesecake Stuffed Strawberries

Ingredients:
1 lb large strawberries
1 (8 ounce) package cream cheese, softened 
3-4 Tablespoons powdered sugar
1 teaspoon vanilla extract
1/4 - 1/2 cup graham cracker crumbs

Instructions:
1. Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some of them are hollow already. Prep all of the strawberries and set aside.
2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.
3. Once strawberries are filled, sprinkle or dip the tops with graham cracker crumbs. If not serving immediately, refrigerate until serving.

Step 1- Take a bowl and place diapers all the way around. Make sure diapers are even. Make 2 bowls full for 2 tires. Take them out of dish, place rubber band around all of them. Place a strip of colorful ribbon around where rubber band is, place a pin to hold into place. Pin will be on bottom.
Take a receiving blanket, fold in half long ways. Start rolling into a tight long strip. Put the end of blanket through 1st wheel (Diapers) and even it on both sides. Place rest of blanket through to the back tire (diapers). Both ends should go through back tire and pulled tight then tucked into back tire.
(This will hold the bike together)

Take 2nd blanket and fold and roll in the same way. Put this blanket through front tire and pull up and secure with teething ring. Push the ring down to allow to handles to appear. Place a baby sock (With crumpled paper inside) to each end. Use a bib as front fender, and a bib for the back fender. Where you place the teething ring on front blanket handles, place a sippy cup or a bottle as the symbol for a headlight.

You can decorate with pipe cleaners as spokes. Place a stuffed animal on top and what a wonderful gift. I borrowed this picture from Baby Favors and Gifts.com.

It takes approximately 17 diapers per tire, cake pan, 2 large rubber bands, baby bottle or sippy cup, wash cloth, scissors, pins, ribbon, 2 receiving blankets, pair of baby socks and 2 bibs. It's very simple and not that time consuming once you get the hang of it.

A great compliment to rolls, baked potatoes, as a garnish for any dish. 1 pound of softened butter, add garlic, Tarragon,parsley, rosemary, onion flakes or favorite herbs. Place on saran wrap, roll, and refrigerate until needed. Can be frozen.

To keep berries from molding and bacteria setting in, soak them in 1 part vinegar and 10 parts water.They will last so much longer without any fuzz.

GINNY'S AWESOME ENCHILADAS



GINNY'S AWESOME ENCHILADAS
8-8in. flour tortillas
2-tbls. butter
1/2 cp. onion chopped
1/4 cp.-bell pepper chopped
4 cloves-garlic minced
1/2 cp.-sliced black olives
1-4 oz. can diced green chilis(drained)
1-can-cream of chicken(reduced salt)
2 cps.-cooked & cubed chicken breast.
11/2 cps.-Mexican cheese(or more)
1/4 cp.-milk
1/2 cp. -sour cream
shredded pepper jack(optional)

Preheat oven to 350.
In sauce pan, saute onions,pepper & garlic in butter,take off heat. Add soup,sour cream, 1/4 cp. olives,chilies & 3/4 cp. shredded mex. cheese.

Blend well.

Take out 3/4 cp. of mixture & set aside. Place cooked chicken in pan with rest of mixture,mix well. Place tortillas on plate covered w/paper towel.. heat in micro. 1 min. 

Spoon mixture onto shells & roll up. Put split side down in baking dish.mix 3/4 cp. mixture w/milk. Spoon over enchiladas. Sprinkle olives & remaining cheese, including pepper jack if desired, over top. Bake 30 min.serve with side salsa. this recipe can be modified.

APPLES, ICE CREAM, CARAMEL (HIP HUGGER)



APPLES, ICE CREAM, CARAMEL (HIP HUGGER)
1 Tablespoon butter
½ cup firmly packed brown sugar
¼ cup golden (light colored) syrup
¼ cup cold water
pinch salt
1 or 2 cans sweetened condensed milk(Depending on thickness you want)
1 tsp vanilla extract
2 Tbsp brandy (Optional)
apples (use nice round red ones that ‘stand up’ nicely)
ice cream
chopped nuts

Place the butter in a saucepan and melt it gently. Add the brown sugar, golden syrup, water and salt. Heat gently at first and stir constantly as the sugar dissolves. Bring to the boil, still stirring, until the mixture really bubbles like mad. Reduce the heat, and add the condensed milk, vanilla and brandy. Stir until it’s nicely combined and a good caramel color, then take it off the heat.

Cut the top bit off the apple, and scoop out all the inside flesh. I used a melon scoop which was handy, I’m sure a teaspoon would do the trick.

If you want to do this more than 5 minutes before serving, squeeze lemon juice over the apple to stop it browning. Fill the apple with a scoop or two of ice cream, and drizzle with the warm caramel (if the caramel has thickened while you got the apples ready, just gently heat it again, or add one more dash of brandy). Top with chopped nuts and serve.

Paradise Pork Chops



Paradise Pork Chops
6 center cut pork chops
1/2 cup brown sugar
1 Tbsp garlic
1 Tbsp sage
1 Tbsp paprika
Liquid smoke
2 cups French fried onions, crushed
Put brown sugar in a bowl with the garlic, sage and paprika, mix together. Coat the pork chops with liquid smoke on both sides and place the chops and the seasoning mixture into a plastic bag or covered bowl to marinate at least an hour turning occasionally. Remove one chop at a time and coat both sides with the onions, pressing firmly into the chop. Place in baking dish and bake at 350 degrees for 40 to 60 minutes or until done. Juices will run clear and the internal temperature will be 165 degrees.
Notes:
Bake uncovered for 20 minute and then turn over to crisp both sides.
This is included in baking time.

LASAGNE ROLL-UPS



LASAGNE ROLL-UPS 
8 Cooked lasagna noodles
1 (15-ounce) container Ricotta Cheese.
2 cups shredded Mozzarella cheese
1 ½ cups grated Parmesan cheese
1 large egg, lightly beaten
½ cup chopped fresh basil.
½ teaspoon salt
1 (28 ounce) can crushed tomatoes
3 tablespoons extra-virgin olive oil
4 garlic cloves minced (2 Table. garlic powder)
Heat oven to 375 degrees
Combine Ricotta, 1 cup Mozzarella, 1 cup Parmesan, egg, ¼ cup Basil and salt in a bowl.
Combine tomatoes, oil, garlic and remaining basil in a medium bowl.
Spread half the tomato mixture in casserole dish. (13x9 works great)
With short side facing you, dollop ¼ cup cheese mixture on each noodle, roll and arrange seam side down in casserole
Dish. Pour remaining tomato mixture over roll-ups.
Bake in oven until tomato sauce is hot -about 10 to 15 minutes Remove when sauce is cooked through, sprinkle remaining mozzarella and Parmesan over roll-ups. Bake until cheese is melted and lightly browned. (About 5 minutes)

Remove from oven, let stand at least 5 minutes before serving.
