SMOKED SALMON/POTATO APPETIZERS



SMOKED SALMON/POTATO APPETIZERS
Clean the smallest ,most round potatoes that you can find. (I like to soak mine in lemon water for about an hour, then scrub)
Boil until done but not overdone. You want them al dente (to the bite) but not squishy. Let Set until cool enough to handle. Slice in half.

Scoop out a small amount, mix with chives cream cheese or sour cream (Imagination is fun here) add back to potato, top with thin, thin slice of smoked salmon (Or a favorite), a little dill or pepper across the top and viola!!! GREAT for parties or just snacks. Easy. I always do 1 potato per person with a couple for the pot.
