A collection of all the stuff I am bombarded with every day on Facebook and email and Twitter and so forth. Almost all of it is stuff that was sent to me and I did not request. I don't know where most of it came from other than the person that dropped it on me.

Spinach Lasagna Roll Up
8 dried lasagna noodles
1 beaten egg
1 carton (15 ounce) ricotta cheese
1 package (10 ounce) frozen chopped spinach, thawed and drained
1 1/2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 jar (26 ounce) prepared pasta sauce
1. Cook lasagna noodles according to package directions. Drain noodles; rise with cold water. Drain again.
2. For filling, in a mixing bowl stir together egg, ricotta cheese, spinach, 1 cup of the mozzarella cheese and 3/4 cup of the Parmesan cheese.
3. Spread about 1/2 cup of the filling on each lasagna noodle. Starting from the narrow end, roll up each lasagna noodle. Place lasagna rolls in a 2-quart baking dish. Pour sauce over lasagna rolls. Cover dish with foil.
4. Bake in a 375 degree oven for 25 minutes. Remove foil. Sprinkle with remaining mozzarella cheese. Bake for 5-10 minutes more or until heated through. Let stand for 5 minutes before serving. Sprinkle with remaining Parmesan cheese. Serves 8.
