LEFTOVER HAM/ASPARAGUS/CHEESE FRITTATA



LEFTOVER HAM/ASPARAGUS/CHEESE FRITTATA

1 or 2 cups shopped ham (bacon, sausage or whatever you like)
1/2 cup chopped peppers, onions and Mushrooms(if you like)
1 bag frozen asparagus (can use canned but has to be well,well drained) or broccoli, spinach, (Your choice)
1/4 bag mixed finely shredded cheese.
5 eggs well beaten with a small amount of milk.
salt/pepper to taste.

3 pats butter or 2 tablespoons Olive oil.
**chopped tomatoes and option-

In a non-stick, greased frying pan, add pepper mixture, asparagus, ham and saute till Asparagus is fork tender and peppers and onions tender.
add mixed eggs and pour over the saute ham mixture. Sprinkle cheese over all and salt and pepper. Cook on med low until egg is cooked through..You may lift it gently to have wetness cook.
When done, scoot out onto platter, garnish with parsley or other. Let sit a minute or two then cut into slices.

**note, if the egg dish falls apart, has to be gently stirred, no harm done..just garnish and serve.
