IRISH NACHOS FOR NEW TASTE TREAT

4-5 sliced Yukon gold potatoes
4 slices of crumbled bacon
pickled jalapenos 
shredded sharp cheddar cheese
olive oil
salt, pepper, cayenne pepper to taste
sour cream
chopped green onions
Lets start these nachos by slicing some potatoes (not too thin!) drizzling them with olive oil, and season them with a bit of salt and pepper. If you like things a little spicy go ahead and throw a dash of cayenne pepper on them too.

Pop them into a 420 degree oven for about 20 minutes or until the are nice and brown.
Might as well pop some bacon in the oven while were at it!
Have you ever baked bacon? If I don’t need the bacon fat I’ll bake it instead of frying it. Less mess and perfectly cooked strips every time!

Slide this in right next to your potatoes for about 10 minutes.
When your potatoes are nice and crispy arrange them in a oven proof skillet…
And throw some pickled jalapenos on top!
Chop up your cooked bacon and sprinkle that on there too…

Top this all with a few handfuls of shredded sharp cheddar and put this back into your oven for a few minutes…
Go ahead and top your nachos with a dollop of sour cream and few green onions.
