Cranberry Orange Muffins

Ingredients:
1 3/4 Cups Flour
1/3 Cup Sugar
2 Tsp Baking Powder
1/2 Tsp Salt
1 Egg
3/4 Cup Orange Juice
1/3 Cup Vegetable Oil
1 Cup Fresh Cranberries
2 Tsp Grated Orange Rind

Preparation:
Preheat oven to 400 degrees. Spray muffin cups with nonstick coating. In medium bowl, mix flour, sugar, baking powder, & salt. Make a well in center. In a small bowl, mix egg (slightly beaten), orange juice & oil, add to flour mixture. Stir until batter is moistened and lumpy. Fold in cranberries and orange rind. Fill muffin cups 3/4 full. Sprinkle muffin tops with a little sugar. Bake 20 minutes or until golden brown. Let stand for 5 minutes, then remove from cups.
