Blueberry Heaven Muffins



Blueberry Heaven Muffins

1 1/2 cups all-purpose flour
3/4 cup organic sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup applesauce
1 egg*
1/3 cup milk*
1 cup fresh blueberries
Topping:
1/2 cup organic sugar
1/3 cup all-purpose flour
1/4 cup unsalted butter, cubed
1 1/2 teaspoons ground cinnamon
Directions
Preheat oven to 400.
Place muffin liners
In a large bowl, stir together dry ingredients- 1 1/2 cups flour, 3/4 cup sugar, ½ teas salt and 2 teas baking powder.
In a small bowl mix 1/3 cup applesauce, 1 egg (or egg replacer), and 1/3 cup milk (or Almond Milk)
Add egg mixture to flour mixture. Fold in blueberries.
Fill muffin cups leave a ¼ inch for Sugar Crumb Topping
Sugar Crumb Topping: Mix together with a fork 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon.
Sprinkle Sugar Crumb Topping over each muffin
Bake for 20 to 25 minutes or until done
