Creamy Broccoli Casserole


Creamy Broccoli Casserole
1 (16 ounce) package frozen broccoli
1 (6 ounce) can condensed cream of celery soup
1 cup mayonnaise
1 cup shredded cheddar cheese
2 eggs, lightly beaten
1/2 cup cheese crackers
1 -2 tablespoon instant minced onion or 1 -2 tablespoon onion powder
1 tablespoon butter or 1 tablespoon margarine
Preheat oven 350. Prepare broccoli by package and drain. Combine soup, mayo, eggs, cheese, onions, and stir in broccoli. Pour into 1-1/2 quart greased baking dish. Melt butter. Crush crackers and mix with butter. Sprinkle over top of broccoli mixture. Bake for 45-55 minute.
Bake for 45-55 minutes.

HACIENDA WET BURRITO COPY-CAT RECIPE

1 (3 lb) chuck roast, trim outer fat
1/2 teaspoon seasoning salt (I use Johnnie's)
1/2 teaspoon garlic powder
1/2 teaspoon fresh coarse ground black pepper
1/2 teaspoon cumin
1/2 teaspoon chili powder
3 tablespoons vegetable oil, more if needed
1 (14 ounce) can beef broth
2 packets (1 ounce each) Lawry's taco seasoning mix
1 teaspoon Frank's red hot sauce
1 tablespoon butter
6 to 8 large flour tortillas, burrito-sized
refried beans
thinly sliced tomato
shredded lettuce
1 (32 ounce) package Colby-Monterey jack cheese, shredded
sour cream

Garlic Onion Virginia Ham and Swiss Sandwich


Garlic Onion Virginia Ham and Swiss Sandwich
2 -12 packages of sweet Hawaiian rolls 
1 1/2 lbs of Virginia ham
12 slices Swiss cheese
1 stick of real butter
2 teaspoons Worcestershire sauce
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon poppy seeds
Directions:
You will need two 9 x 13 pans. Place the bottoms of 12 rolls in each pan. Place ham (about 2 shaved slices or so) on the rolls. Cut the cheese slices into 4 parts and place 2 small pieces on each sandwich. Put the dinner roll tops on. In a sauce pan, mix butter, Worcestershire sauce, onion powder, garlic powder and poppy seeds. Wait until all butter is melted and then brush the melted mixture over the ham sandwiches. Cover with foil and let sit in fridge for 1 hour or over night. (If you want to bake them right away, you can also.) Preheat oven to 375 and bake for 15 minutes or until cheese is melted. Serve.  Great hot or not.

CRAW FISH CORNBREAD


CRAW FISH CORNBREAD

2 cups yellow cornmeal
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon Creole seasoning
6 eggs
2/3 cup vegetable oil
1 yellow onion, finely diced
8 ounces cheddar cheese, grated
1 (12-ounce) bag frozen corn, thawed
2 pounds craw fish tail meat, finely chopped
1 (4-ounce) can diced jalapenos

1. Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.

2. Stir the cornmeal, baking powder, salt and creole seasoning together in a very large bowl. Stir in the eggs and oil and mix thoroughly. Add the onion, cheese, corn, craw fish and jalapenos and stir until everything is completely mixed together and evenly distributed.

3. Spread the cornbread into the prepared pan, smoothing out the surface. Bake for 45 – 50 minutes until golden and firm and a tester comes out clean. Let rest for about 10 minutes before slicing and serving warm.

Slow Cooker Mac and Cheese

 Ingredients:
Cooking spray
8 ounces cooked elbow macaroni
One 12-ounce can evaporated milk
1 1/2 cups whole milk
1/4 cup (1/2 stick ) of butter, melted
1 teaspoon salt
Dash of pepper
2 large eggs, beaten
Two 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups) Dash of paprika
Directions:
In a large 4-quart slow cooker sprayed with cooking spray, mix the macaroni, evaporated milk, milk, butter, salt, pepper, eggs and all but 1/2 cup of the grated cheese. Sprinkle the reserved cheese over the top of the mixture and then sprinkle with paprika. Cover and cook on low heat for 3 hours and 15 minutes. Turn off the slow cooker, stir the mixture and serve hot.
Cook's Note: If you don't have a slow cooker, grease a 9-by-13-by-2-inch pan with butter, add the mixture and bake at 350 degrees F for 50 minutes.

Emma's Easy Crepes


Emma's Easy Crepes

1. Beat eggs. 1 egg = 2 crepes.
2. Add enough flour to make a thick paste.
3. Whisk in enough milk to thin down.  Should be almost water-like.
4. Pour ladle full into hot pan.  Turn pan to coat sides.
5. When edges start to crisp, turn over.
6. Cook other side the same length of time.
7. Serve with your favorite fillings and roll up.

SWEET HAWAIIAN CROCK-POT CHICKEN

2 lb. Chicken tenderloin chunks
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce

Combine all together, cook on low in Crock-pot 6-8 hours...that's it! Done! Serve with brown rice and you have a complete, easy meal.

1 teaspoon Castor Oil
8 drops rosemary essential oil
8 drops lemongrass essential oil
4 drops geranium essential oil

Directions:
Add all ingredients to a 2 ounce amber spray bottle.  Shake and spray.

Caramel Apple Cheesecake Bars
Ingredients:
Crust:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup (2 sticks) butter, softened
Cheesecake Filling:
3 (8-ounce) packages cream cheese, softened
3/4 cup sugar, plus 2 tablespoons, divided
3 large eggs
1 & 1/2 teaspoons vanilla extract
Apples:
3 Granny Smith apples, peeled, cored and finely chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened
Drizzle:
1/2 cup caramel topping for drizzling after baked
Directions:
Preheat oven to 350 degrees F.
In a medium bowl, combine flour and brown sugar
Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil Bake 15 minutes or until lightly browned.
In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth
Then add eggs, 1 at a time, and vanilla
Stir to combine
Pour over warm crust.
In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg
Spoon evenly over cream cheese mixture.
For the streusel topping:
In a small bowl, combine all ingredients
Use clean hands to thoroughly combine the butter into the mixture.
Sprinkle Streusel topping over apples
Bake 40 to 45 minutes, or until filling is set
Drizzle with caramel topping and let cool.

Salsa Verde:
2 tomatillos, chopped (remove papery skin) 
4 ounces mild green chilies
1 green onion, chopped
2 tablespoons cilantro, fresh
1 1/4 teaspoons ground cumin
salt & fresh ground pepper

Tomato Salsa:
1 medium tomato, diced
1 tablespoon Spanish onion, minced
1 tablespoon cilantro, fresh minced
1/4 teaspoon lime juice
1/2 jalapeno, small minced
salt
fresh ground pepper

Southwestern Sauce:
1/2 cup mayonnaise
1 teaspoon white vinegar
1 teaspoon water
3/4 teaspoon granulated sugar
1/2 teaspoon chili powder
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon onion powder
salt
garlic powder

Tamale Cakes:
1 1/2 cups corn, frozen
1/2 cup butter, softened
3 tablespoons granulated sugar
1/8 teaspoon salt
1/2 cup masa harina (corn flour)
2 tablespoons all-purpose flour

Garnish:
1/4 cup sour cream
1/2 avocado, chopped
2 tablespoons cilantro, fresh chopped

Rhubarb Crumble


Topping
1 Cup      Flour
3/4 Cup   Brown Sugar
1/2 Cup   Old Fashioned Oats
1/4 Tsp    Salt
8 Tbsp     Cubed Butter

Filling
5 Cups       Sliced Rhubarb
1 Cup         Brown Sugar
3 Tbsp       Cornstarch
1/2 Tbsp    Lemon Juice
1/4 Tsp      Salt

-Preheat oven to 350 degrees.
-Grease 8 inch square baking dish.
-Combine filling ingredients and place in baking dish.
-In a food processor, mix topping ingredients until crumbly.
-Sprinkle topping over filling.
-Bake 45 minutes.

Salad With Bleu Cheese and Steak



Salad
  • 2 Ounces of Crumbled Bleu Cheese
  • 6 Cups in total of Lettuce and Spinach

Dressing
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1/2 tsp Worcestershire Sauce
  • 1/2 tsp Dijon Mustard
  • Pinch of Salt
Toppings
  • Sliced Shallots- Use as many according to your taste, but 3 to 5 are a good starting point as you experiment to determine what you like.
  • Lean Steak - For a salad with a hint of meatiness, then use a small steak.  For meatiness with a hint of salad use a large steak.
  • 1 tbsp Olive Oil
Cook the steak to your liking.  Then saute the shallots in the steak pan.

Taco Ring


Taco Ring

2 crescent roll tubes
1 LB ground beef (or ground turkey)
1 packet of taco seasoning
1 1/2 cups grated cheddar cheese
Shredded lettuce
1 or 2 diced tomatoes depending on size
1/2 small can Olives (sliced) (Avocado, Sour cream etc)

Directions
1. Separate the crescent pastry and lay out in a circle, pointed ends out on a foil lined pizza pan, sprayed very lightly with cooking spray. Use some of the leftover crescent rolls to to make the center a bit thicker as this will hold the meat.
2. Brown meat in a frying pan until no longer pink. Drain fat and add taco seasoning as directed on package, reducing the water to a scant 1/3 cup from the 1/2 cup called for. Drain excess liquid from meat.
3. Sprinkle meat mixture in a circle inside the crescent rolls, then sprinkle 1 cup of the cheese over the meat. Pull crescent roll points over meat and cheese and tuck in.

Bake at 350 degrees until pastry is golden brown (30 min).

4. Add remaining 1/2 cup of cheese, chopped lettuce, tomato, black olives, and jalapenos (if using), into the middle of the ring, then add a few dollops of sour cream if desired, before serving.

Slap Your Mother Pot Roast

3 pound beef roast such as a chuck roast
1 envelope of dry Italian salad dressing mix
1 envelope of dry Ranch salad dressing mix
1 envelope of dry brown gravy mix
2 cups water

Put the water in a measuring cup that is larger then the amount of water you are using. Now add and mix all three envelopes to the water. Mix until blended completely.
Brown the roast (if desired) Add the meat to your cooker. Pour the water, salad dressing mixture over the roast.In the slow cooker, cook it on high for about 4 hours, on low about 8 hours.

Salted Caramel



Salted Caramel

Start with a box of Betty Crocker Fudge Brownies.
Prepare the brownie batter according to package instructions. Pour about 1/3 of the batter into the bottom of a 9×13-inch baking pan that has been lined with parchment paper or greased with cooking spray. Spread the batter so that it forms an even layer to coat the bottom of the pan. 
Then comes the fun pretzel part! Lay the pretzels down in an even layer on top of the brownie batter, then add a second even layer.
Spoon the rest of the brownie batter on top of the pretzel layer. I found it worked best to spoon the batter on in small clumps. Then bake the brownies in the oven at 350 for about 30 minutes, or until a toothpick inserted in the center comes out clean.
Once the brownies are out, spoon some caramel sauce onto the top of the brownies.And smooth it out to form an even layer.
Cut them into individual bars, and watch that ooey gooey caramel mix with those salty pretzels and chocolate.
