Banana Cupcakes

Banana Cupcakes

6 1/2 tablespoons unsalted butter, softened
1/2 cup brown sugar
2 eggs, at room temperature
1 cup all purpose flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon allspice
scant 1/2 teaspoon salt
2/3 cup mashed banana (about 1 1/2 medium bananas)
1/3 cup sour cream or vanilla yogurt
3 tablespoons milk


Line a muffin pan with paper liners - for about 12 cupcakes. Preheat oven to 350F.
Beat together the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well between each addition.
Sift together the flour, baking soda, baking powder, allspice, and salt. Add gradually to the butter mixture. Add the mashed banana, sour cream (or yogurt), and milk. Mix until everything is combined (don't over-mix).
Divide batter among 12 lined muffin cups, bake for 15-18 minutes until toothpick inserted in center comes out clean. Cool completely before frosting.

Use this recipe for the Vanilla Swiss Meringue Buttercream
Frost cupcakes using a large open star tip.


Drizzle with Chocolate Ganache, if desired.


Chocolate Ganache Drizzle
1 square semi-sweet baking chocolate, chopped
1 tablespoon heavy whipping cream


Heat the heavy whipping cream in a small bowl in the microwave for 30 seconds. Let cool for about 30 seconds then add the chocolate. Let sit for 2-3 minutes, then stir until smooth. Drizzle over frosted cupcakes. Top with chocolate jimmies

Banana Chocolate Chip Muffins


Banana Chocolate Chip Muffins

MUFFIN INGREDIENTS
•1 1/2 cups all-purpose flour
•1 teaspoon baking soda
•1 teaspoon baking powder
•1/2 teaspoon salt
•2 bananas, mashed
•3/4 cup white sugar
•1 egg, slightly beaten
•1/3 cup butter, melted
•1/2 cup milk chocolate or semi-sweet chocolate chips

CRUMB TOPPING INGREDIENTS
•1/3 cup packed brown sugar
•2 tablespoons flour
•1/4 teaspoon ground cinnamon
•1 tablespoon butter

DIRECTIONS
1.Pre-heat your oven to 375 degrees F and prepare a muffin tin by greasing it or using paper liners.
2.In a large bowl combine flour, baking soda, baking powder, and salt. Set aside.
3.In a small bowl combine mashed bananas, sugar, egg, and melted butter.
4.Combine the ingredients from steps two and three and stir lightly until combined.
5.Fold in chocolate chips.
6.In a small bowl combine brown sugar, flour, and ground cinnamon. Use a fork to mix in the butter until you have a crumbly mixture.
7.Spoon 1/4 cup of muffin dough into each muffin cup. This should yield 12 muffins.
8.Divide the crumb topping mixture among the 12 muffins (about 1 teaspoon per muffin)
9.Bake for 18-22 minutes, or until you stick a toothpick in a muffin and it comes out clean.
10.Allow to cool for a few minutes, then serve.

Banana Bread Brownies



Banana Bread Brownies

Ingredients:
Banana Bread Bars:
1-1/2 c. sugar
1 c. sour cream
1/2 c. butter, softened
2 eggs
1-3/4 (3 or 4) ripe bananas, mashed
2 tsp. vanilla extract
2 c. all purpose flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. chopped walnuts (optional)

Brown Butter Frosting:
1/2 c. butter
4 c. powdered sugar
1-1/2 tsp. vanilla extract
3 tbsp. milk

Directions:
1. Heat oven to 375F. Grease and flour 15x10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.

2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.

3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.
4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).

Banana Pie Cups



Banana Pie Cups

Ingredients
Crushed vanilla wafers
Vanilla pudding
Ripe bananas; sliced
Whipped topping

Directions

1. Crush vanilla wafers in a plastic bag and spoon about 1/3 cup into the bottom of a glass.

2. Pour vanilla pudding over top wafers (I found it easiest to put the pudding into a plastic bag, snip the corner and squeeze it in...gives you a bit more control and it's less messy).

3. Top pudding with sliced bananas, then refrigerate if not serving immediately.

4. Once ready to serve, top bananas with whipped cream (I use Cool Whip, so I do the plastic bag trick again for a neater appearance. Or you can use canned whipped cream).
